Thanksgiving Feast Menu

What a blessing to have so many choices and the resources to buy such a feast!

This year we were able to get everything we needed to have a traditional feast for very inexpensively. Our turkey was about $5, potatoes $0.88, stuffing was almost free and the pumpkins came from the garden. We'll be celebrating with our normal crew of 6 (my family plus my parents), my bro and sis-in-law, and my grandma. So we'll be feeding 9 this year plus a little one on the way:).

Here's our menu:

Breakfast:
Turkey sausage, Rhodes Cin Rolls, satsumas, scrambled eggs, possibly an apple coffee cake

Appetizers: Olive, pickle, and veggie tray, crackers, onion cheese dip

Main Meal:
Turkey, cooked in a bag (my cheat to make it faster and more foolproof).
Mashed Potatoes & Gravy
Stuffing in the crockpot (Stovetop...I don't like stuffing so I don't bother to make from scratch:)
Cranberry sauce (from can and scratch)
7 layer salad (grandma bringing)
Green Beans
Sweet Potato Casserole
Rolls (going to try to make yeast ones again!)
Homemade Applesauce

Dessert: pumpkin and apple pie, icecream (bro and sis-in-law bring). Possibly a pumpkin cream pie from my mom.

Lessons from a wood chipper

Our time in our married hometown is winding down quickly. We are (hopefully!) heading to the Oregon Coast with my folks for a camping trip as I mentioned before. Daniel is on the mend from a case of shingles too. He's also been working long hours on the house projects (our rental... that has renters in it:) or at least as long as he can without stretching our (good so far) renters' patience to the max!

I've been thinking and praying of ways I can be a better helper to my husband in this area because if there is a house project skill, I don't have it:). Especially since its looking like we'll miss at least part of the camping trip because the projects aren't going quite as quickly as planned.

Last night I dreamt that I offered to help Daniel chip the ginormous pile of branches. In the morning it felt so real but I thought it would be silly and I couldn't be of help. I casually asked Daniel if that would be helpful and he said YES! He rented a truck and a chipper for a half day and I found a babysitter for an hour and a half and helped chip through a pile of branches and debris for almost an hour..what a workout! And it was kinda fun, actually.

I am so thankful to have a chance to help in a way that was outside my comfort zone, but ended up being a good time with the hubby. Although you definitely don't want to think about that movie Fargo when using it...;)

Thankful Thursday: So many blessings

I am home with a sick baby today (the rash that was supposed to go away quickly has spread and M is very tired, cranky and has little appetite) and have had time to reflect which I don't normally do much of.

Today I am thankful for:

Being able to stay home with my little one when sick and not having to worry about daycare or the like.

Potatoes in the crockpot cooking away for dinner...hardly any last minute prep needed for the loaded baked potatoes we'll be eating.

Daniel's job that God provided in His perfect timing. Its not always a fun work environment for Daniel, but I have seen so much growth in him as a result of the hard times.

Being so close to finishing all paperwork for our application to Wycliffe. If girlie does nap later, I hope to turn in the last piece of the Bible knowlege assesment today.

A well stocked fridge and pantry and coming under budget this month will most definitely happen!

A healthy second pregnancy so far. We see a midwife next Tuesday and again and will be scheduling our ultrasound which will hopefully tell us baby's gender...yay!

For a great place to live where our landlord and maintenance guy are typically super helpful when something is wrong.

For a church family that is often so much of a family to us. This week we've been blessed by our involvement in the church so many times.

Fall Harvest

This is my first contribution to Thankful Thursday.


Can I just say that I love having a church family!? 4 years ago when Daniel and I moved here (seperately, but to the same apartment complex...we were only engaged), we knew 1 person, my roommate. I moved out the first of September (2004) to start my job, actually a paid interneship, with the school disttrict. 3 weeks later, Daniel moved out here and started looking for a church for us.

We are so thankful that after a most discouraging church-search, God led us to our current church. We have been blessed in abundance by this church, with friendship, support as a newly married couple, encouragement in our desire to do overseas missions, as well as with material blessings as well.

Recently several families in the church have shared their vegetable harvest with us. It has been wonderful to be able to eat fresh produce to our hearts content, not being concerned that we are using the next meal's produce up. What a blessing!
