You know you've got pregnant AND toddler brain when...

...you strap your 15 month old girl into the ergo, walk to the library, then the post office -bills in hand- and merrily drop your bills into the blue garbage can next to the post office mail box!

Luckily, some kind people noticed my look of panic and horror and helped me heave the lid off the garbage can and retrieve my bills. This goes in the awesome file for sure;).

Here is the cute one largely responsible for the loss of my mind:)

Really Good Beans & Rice

Usually when we have beans and rice, I think of it as our "po folks" meal. But last night our humble beans and rice were so good Daniel decided these tasted like "gourmet" beans and rice!

After cooking the pinto beans (doing the pre-soak and all that), I sauteed 1/2 an onion and 2 cloves of garlic in 1 TBS. of canola oil. Here's where the measurements cease, but I am sure you can replicate this to your own taste--I added the beans 3-4 cups I think, a tsp. or more of salt, several "shakes" each of paprika, chili powder, pepper, garlic and onion powder. Continue to stir and heat until well combined. We ate these yummy beans over baked brown rice (using the More with less recipe) and topped it with a little sharp cheddar, sour cream and salsa. We served it with broccoli and not-so attractive whole wheat buttermilk corn bread that was very tasty, just hastily cut:).

M is enjoying her beans and rice and getting better at using a fork!

BookWorm girl

When M "reads" now, she speaks in a very cute running gibberish. I suppose that's what she hears most of the time when I read! Unfortunately she still chews on all her books, so many of our books are chewed up and missing their binding or parts of pages. If I ever figure out how to convert our new camera's videos into an uploadable format, I will also post the cutest video of M reading her books.

One of the things I can't wait for is having my two girls in my lap or by my side and reading books. I think that will be an incredibly special time!

*Does anyone happen to have any children's book reccomendations for us? Any are great, but we are particularly looking for books that will help us to impart our faith to our children. *

The good things in life are free this week at WAGS: haircare and icecream

Yesterday at Walgreen's I took advantage of the great Garnier Fructis Deal and got 2 free hair gels and 4 shampoos & conditioners. I have a ton more coupons, but I have no place to store anymore! If you need hair products for cheap, you can still take advantage...buy the Sunday paper (there will be $1 off coupons for Garnier hair care there) and pick up the EasySaver coupon book at the front of any Walgreen's. Pick up any Garnier hair products that are tagged as $0.99 after EasySaver coupon and go to check out. Give the cashier your manufacturer's coupon first, then the EasySaver coupon. This will keep the register from "beeping".

Because its actually better than free (depending how your register rings it up- it may be -$0.01) you may want to have something else in your cart:) I also took advantage of the coupons for $3 off Ben & Jerry's icecream (coupon is no longer available) to get the 2/$6 B&J's for free!

Menu Plan uh...Thursday

Since we were gone for half the week for Christmas, I am going to menu plan for the rest of this week along with all of next week all in one shot. I did my shopping at Fred Meyer and Safeway to supplement a still-full pantry and freezer, but empty fridge.

Breakfasts: choco-chip-cereal muffins (I just made a batch of 24 of these), cornbread and honey, cold cereal, scones

Lunches: leftovers;)

Dinners:

Thursday (tonight!): to friends' house to eat

Friday: Homemade Cheesy Pizza and some sort of veggies

Saturday: Chicken N' Dumplins

Sunday: Beans and Rice (I bought a huge bag of pinto beans and organic brown rice at Costco while at my parents'...so I am stocked for the economic meltdown now;); corn muffins, broccoli

Monday: Macaroni and Cheese with leftover ham mixed in and peas

Tuesday: Stir Fry-Chicken and broccoli over lots of brown rice (can you tell I got cheap broccoli this week:)?

Wednesday: Bean and Cheese Quesadillas with green beans

Thursday: Skillet Beef w/ lentils (More with Less)

Friday: Hawaiian Pizza (homemade)

Saturday: Baked Chicken with mashed potatoes and mixed vegetables

Sunday: Grilled cheese on homemade whole wheat bread, pickles and soup
