My mom sends me cute emails saying she is "wannabe bloggin'" with beautiful pics attached. I am so jealous of all the fresh produce she gets from her neighbors (see pic)

Monday: Leftovers (Split Pea Dahl with brown Rice & Zucchini Skillet) and maybe fast food...we will be hiking all day:)
Tuesday: Twice Baked Potatoes with a side of stir fried zucchini and cabbage
Wednesday: Crockpot Indian Curry
Thursday: Curried Carrot Soup (thanks Michele!), Homemade Calico Baked Beans (More with Less cookbook) and Cheesy Biscuits
Friday: Whole Wheat Cheese(burger) Pizza Night! (our pretty much every Friday night tradition) with carrot sticks/dip
Saturday: Crockpot Potato Bean Casserole (minute meals vegetarian)
