Menu Plan Monday (1st week pantry/freezer clean out)
Monday: Homemade Pizza with salami/cheese and carrot sticks on the side
Tuesday: Pasta Lasagna
Wednesday: Enchiladas
Thursday: Golden Potato Soup and Cheesy Garlic Biscuits (we had this on the menu for last week, but had tasty Jambalaya with the biscuits instead when we had company)
Friday: Homemade Calzones, Salad
Saturday: Turkey and Mashed potatoes
Sunday: Tasty Turkey Casserole (recipe from my lovely MIL, Karen!)
Tasty Turkey Casserole
6 c. fresh broccoli florets
1 c. water
6 c. cubed cooked turkey breast
1- 10 3/4 oz condensed cream of chicken soup, undiluted
1 c. (8 oz) sour cream
3/4 c. shredded Swiss cheese
In a large saucepan, combine broccoli and water. Boil; reduce heat; cover and simmer for 6-8 minutes or until crisp-tender; drain. Transfer to a 13 X 9 baking dish coated with nonstick cooking spray. Spring with turkey. combine soup and sour cream. Spoon over turkey. Sprinkle with Swiss cheese. Bake, uncovered, at 375 for 20-25 minutes or until heated through. Yield: 10 servings.
