Rachael's Tasty Calzones

Here is my calzone recipe, which is adapted from several recipes I read on allrecipes.com and uses my favorite pizza dough recipe from Crystal.

Rachael's Tasty Calzones
1 recipe homemade pizza crust such as this one
1 cup ricotta cheese (full fat works best)
1-2 cups mozzarella cheese
1 cup meat (sausage, cut up pepperoni, whatever)
1 cup veggie --chopped spinach, mushrooms, tomatoes, your choice
2-3 cloves of garlic chopped tiny

Make pizza dough, and separate into fist sized balls. Roll out into ovals that are approx 8 inches long. Mix all other ingredients together. Put 1/2 to 3/4 cup on half of each dough oval and fold over, sealing edges well. Put on baking sheet or pizza stone and bake for 15 minutes at 415 degrees. If there is too much filling, save if for the next nights dinner and mix with cooked pasta in a casserole dish and bake for 20 minutes at 350, topping with cheese the last 5 minutes of bake time (voila! 2 dinners in one!)

** We had this for dinner last night with carrot sticks and topped each one with creamy caesar dressing. I doubled the pizza dough recipe, but it was way too much. We will be having calzones for the next 3 meals! (there are only two of us eating:)

These calzones sound delicious. I wanted to let you know I make a big batches of calzones and freeze the leftovers. They reheat great in the oven or toaster oven. That way you don't have to eat the leftovers for the next few days. :-)
