Menu Plan for the Week of 3/15/09



Menu Plan Monday is hosted at Orgjunkie!

Since we have a busy weekend on the road, I thought I would get menu planning done early. Easy peasy since several of the meals from last week didn't get made (we had unexpected leftovers and did a different meal than planned due to guests).

Breakfasts: Sourdough pancakes (these were great...going to do them again), whole wheat cranberry orange scones (didn't do these last week) Side note: I made carrot coconut bread from More With Less and it was really yummy! Even with whole wheat flour:)

Lunches/Snacks: leftovers, fruit, yogurt, cold cereal

Dinners:

M: Quiche (based loosely on this recipe) Ran out of eggs last week, so am making this now...with asparagus

Tue: Corned Beef Brisket, Cabbage and Irish Soda Bread--our St. Patrick's annual meal

Wed: Red Lentil Curry over Brown Rice and cooked carrots

Th: Slow Cooker Beef and Cabbage Soup with leftover Soda Bread

F: Pizza or frozen pizza I got for $1.29 each:)

Sat: Frozen Veggie Stir Fry Mix over Brown rice

Sun: Light meal after fellowship group-- grilled cheese and soup maybe?

Way to use up all the cabbage! Clever! Hope you enjoy your St. Paddy's day feast :)

Glad you came back safe, the pass looked yucky.:(
I am so glad to see that sometimes the plan doesn't go as planned and how you just add it on to the next week. That is just real life stuff! I just started menu plan Monday today. I am going to try it for awhile and see how I like it.

I always enjoy seeing recipes with lentils. My husband is not a picky eater, but he really does not like rice. I like to use more lentils since we all like those. Thanks for the ideas!
