I like to use cream cheese to make my make ahead mashed potatoes for the freezer. Super yummy and then I can just pull out the potatoes the night before I want to use them and thaw them in the fridge.

I stocked up on potatoes last week when they were 95 cents, sounds like I'm set! :)
