Quinoa and Black Beans Stuffed Peppers
This was my first try at cooking Quinoa (pronounced keen-wa, I believe) and we all liked it! Even the baby ate the dish (minus the green pepper), spices and all! The recipe I loosely followed is here.
Here is some more info on Quinoa, and its nutritional goodness! Quinoa as we ate it is more of a seed and "is high in protein, calcium and iron, a relatively good source of vitamin E and several of the B vitamins."
