Menu Plan for the Week of July 21st, 2008


Breakfast: Multi-Grain Hot Cereal, Blueberry Muffins

Lunches: Leftovers, Bean & Cheese Quesadillas

Dinner:

Monday: Quinoa with Black Beans (first time to try!) in fresh green peppers (from my parent's neighbor..yeah!)

Tuesday: Whole Wheat Spagetti with alfredo sauce and green beans

Wednesday: Corn Bread, Chili and "fried" zuccinni squash

Thursday: Baked Potatoes with leftover Chili, cheese, etc. on top and Brocolli (and Leftover Cornbread

Friday: Cheese Pizza


Saturday: Stir-Fried Cabbage and Kielbasa (part veg, part real)

Sunday: Eating with our Fellowship group...so we will have a lighter meal of tomato soup and egg salad sandwiches

For the past two weeks we ate a mostly vegan diet. We talked about how those weeks went overall, and are thinking we will stick to a 5 day a week (roughly...not being too strict here) vegetarian diet for the health/cost benefits and through some dishes with meat/chicken that we really enjoy in once in a awhile.

Not sure what it is, but it is difficult to keep my energy (blood sugar?) up without eating some dairy/egg at least with most meals. So for now, a 100% vegan diet is not going to work (I am nursing a 9 1/2 month old, so I eat all the time anyway!) out well without eating constantly. There are some great high protein foods that helped to bridge that gap though...we added TVP or beans to almost every meal!
