Monday: Beans and Cornbread w/swiss chard on the side (thanks Marie!!)
Tuesday: Italian Pasta Bake w/sausage and broccoli
Wednesday: Crockpot Enchiladas and salad
Thursday: Curried Carrot Soup (thanks Michele!), Homemade Baked Beans (More with Less cookbook) (didn't get to do this last week)
Friday: Whole Wheat Cheese Pizza Night! (our pretty much every Friday night tradition) with carrot sticks/dip
Saturday: Taco Salad w/tortilla chips
Sunday: Cabbage and Turkey Kielbasa Skillet

Could the Cabbage and Turkey Kielbasa Skillet be as simple as it looks? Any way a girl could get the recipe? I've got a head of cabbage saying it's lonesome in my fridge....
Hi Teresa! The Cabbage and Kielbasa Skillet IS as easy as you might think! I do different variations on it every time, but you essentially cut up the kielbasa into rounds or 1/2 rounds and start frying for a minute or two, then add chopped cabbage. We usually add a little soy sauce and maybe salt/pepper, and serve over brown rice. We both LOVE this dish! I may try to get a full post done with this "recipe" soon, so check back if you can:)
